Vegan Ramen Noodles with Veggies
I love cilantro. And avocado. And broccoli. And green onions. And carrots.
But most of all, I love them all combined with a super tasty broth made by Keely. This dish was such a treat. I had to share it. I hope you love it as much as I do. It literally took her about 15 minutes - start to finish. THAT makes it even better.
Ingredients: (for one serving)
1 package Ramen noodles
Broccoli, cut up
Green onion, chopped
Low sodium soy sauce
Garlic clove, minced
1 cube veggie boullion
Cook one package of Ramen noodles as directed. Do not use seasoning.
Cut up broccoli, green onion, cilantro, avocado, carrots and set aside. Use as much of these ingredients as you wish.
Boil water in a separate pan and add 1 TBSP low sodium soy sauce, one squeeze of ginger paste, one clove of garlic and the veggie boullion cube until dissolved.
Mix noodles and veggies into the broth and let it sit for a few minutes. Garnish with more cilantro if you want (yes, please) and some peanuts.
